Peanut Butter and Banana Overnight Oats

Overnight oats aka the busy girl’s breakfast
I think we can all agree that mornings can be tough sometimes. 

You wake up at some ungodly hour, you try to drink your coffee with one hand and apply mascara with the other, you scramble for a pair of pantyhose that doesn’t have holes in them and after 30 min of fruitless efforts you say “Screw it, I am wearing pants today”. 
We are always in a hurry in the morning, which is why we so often miss breakfast.

I get it, no one has time in the morning to do scrambled eggs with avocado toast on side, whip up an instagram-worthy acai bowl or make some banana pancakes.

At least I, personally, never had time for that. 
And then I discovered overnight oats and my life has never been the same since. LOL!

Joke aside - overnight oats are some serious time-saver, so if you like oats - give it a try.
I am sharing my favourite recipe for peanut butter and oats, because it tastes so good it feels like a cheat meal but actually - it’s not, it’s healthy and so, so good for you!

Ingredients

1/3 cup rolled oats
1/2 banana, sliced
1/2 cup almond milk (coconut and soy is fine too - depends on your taste)
2 tsp chia seeds
1 tbsp peanut butter 
1 tsp maple syrup (or honey)

Optional:
1 tsp cocoa nibs
1 tsp coconut flakes
1 scoop of your favourite protein powder



DIRECTIONS

1. Mix all the ingredients in a bowl
2. Pour into a mason jar
3. Let it sit in the fridge overnight. You can keep the mason jar cover or uncovered, your choice. 

4. Take out the fridge the next morning and run out the door. :)
